Salmon with Summer Tomato Salsa

4 (4 ounce) fillets salmon, skin removed1 cup chopped fresh tomato1/2 Hass avocado, chopped1 garlic clove, crushed1 Tbsp balsamic vinegar1 tsp olive oil1/2 cup cooked corn kernels1/4 cup minced red onion1/4 cup chopped fresh cilantrosalt and pepper, to taste1 lime, cut in wedges
1. Preheat oven to 325 degrees.
2. Combine all ingredients (except salmon fillets and lime) in small bowl and refrigerate for 30 minutes.
3. Bake salmon for 15-20 minutes, or until cooked thoroughly.
4. Serve salmon surrounded by the salsa and lime wedges.
Can serve salmon either hot or cool --
Serving cool salmon with salsa is a great summer recipe; just refrigerate until cool

Great recipe!
When baking salmon you should always sear the fish to lock the pores and keep nutrients and juices inside while baking.
Step 2b) Heat a pan on high heat, drop fish in pan on each side for 15-20 seconds to seal pores. Then bake. use a spray of oil if your pan isn't 100% non-stick! - 8/13/09

This was amazing, even in the winter! ;) My bf and I both enjoyed this very much--he even THANKED me after he'd finished eating! For the record, 1 medium tomato = approx. 1 cup diced, 1/4 medium red onion = approx. 1/4 cup chopped, and one handful of cilantro = approx. 1/4 cup chopped. - 1/11/10
