Better Buttermilk Pancakes

Ingredients
1/2 cup whole wheat flour1/2 cup flour1/2 tsp soda1/2 tsp salt1 egg1 cup lowfat buttermilk2 tablespoons Smart Balance Spread, melted1 1/2 tablespoon sugar
Directions
Mix flour, whole wheat flour, soda, salt and sugar in medium mixing bowl. In a large measuring cup, stir together buttermilk, melted spread, and egg. Add liquid ingredients to the dry ingredients. Stir until mixed. May add additional buttermilk for thinner pancakes.

Fry on a hot (350 degrees) griddle.

Makes 12 (4 inch) pancakes.

    I totally loved the pancakes! I replaced the buttermilk with soymilkand used baking powder instead of baking soda. I also used a 1/2 cup of organic flour to replace the usual unbleached flour. My daughter loves the pancakes as well! She kept asking for more. Very easy to make! - 4/14/10

    These certainly don't seem like they are "light" or "reduced"; they are very tasty and filling. I did substitute Splenda for the sugar and butter for the margarine. Then I pureed some peaches and cooked them down to make a syrup... yuum!

    I use honey instead of sugar, and olive oil instead of melted Smart Balance. I also add a teaspoon of ground flax seed for additional fiber and omega-3's. This recipe is wonderful! Even my husband, who doesn't much care for pancakes, can't get enough of these! - 4/3/11

    This turned out great. Used 1 tbsp butter in place of the spread and added a cup of fresh blueberries. Used about 1/4 cup batter - including the berries - and came out with 10 pancakes. Will be making this again soon! - 2/5/11
