Slow Cooker Chicken Posole

2 cloves garlic, finely chopped1.25 pounds chicken thighs, boned and skinned, cut into 1" pieces2 cans hominy, drained and rinsed1 medium onion, chopped1 tsp oregano.5 tsp cumin.25 tsp red pepper flakes2 cans low sodium, low-fat chicken broth1 can (14.5 oz) diced tomatoes2 fresh jalapeno peppers, seeded and chopped (optional, to taste)1 tbsp lime (or lemon) juice.25 tsp black pepper
Combine all ingredients except the tomatoes, lime juice and black pepper in slow cooker. Cover and cook on High for 3 hours, or Low for 5 hours. Stir in tomatoes, lime juice and pepper, and recover until warmed through (about 5 minutes). Serve immediately. Makes 8 one cup servings.

This was wonderful! I did make it with chicken breast instead of thighs, and I used rotel instead of canned tomatoes and jalapenos, and I added a tbsp of chili powder......wonderful! I will definately be making this again, and I have already shared this recipie with my mother. Thanks for posting! - 1/23/09
