The Pioneer Woman's Best Ever Lasagna

Ingredients
1.5 lbs ground beef1/2 lbs HOT breakfast sausage2 cloves minced garlic2 14.5oz cans of Whole Tomatoes2 6oz cans of Tomato Paste2 TBSP dried parsley2 TBSP dried basilsalt1 10oz pkg lasagna noodles1 TBSP olive oil3 cups lowfat cottage cheese2 beaten eggs1/2 cup grated parmesan4 TBSP dried parsley1/2 lb sliced mozzarella
Directions
-Combine meats and garlic and brown.
-Drain grease
-Add tomatoes, tomato paste, parsley, basil and salt to meat. Simmer uncovered for 45 mins. Stir occassionally.
-Boil noodles. Add 1/2tsp salt and 1tbsp olive oil to water and cook noodles al dente.
-Drain and rinse noodles. lay flat on foil.
-While meat and noodles are cooking, mix cottage cheese, eggs, parmesan, 2 tbsp parsley and 1tsp salt together.
-setup assembly line. Meat, mozzarella, cottage cheese mix and noodles.
-spoon a few tbsps of meat into the bottom of the pan so bottom noodles don't stick
-lay 4 cooked noodles in the bottom overlapping
-spread half cottage cheese mixture evenly over noodles
-lay half the mozzarella over cottage cheese
-spread a little less than half the meat mix evenly over the mozzarella
-Repeat the layering process
-top with parmesan cheese
-bake in a preheated 350degree oven for 20 to 30 mins

    I cut the calories a bit by rinsing both sausage and hamburger after cooking to get rid of all the grease and by using egg beaters. Also I never use salt. - 2/6/20

    i don't think the calories are all that bad, if you are making something like this you intend that you will have higher calories that day. Its not like Olive Garden's WOW that mas MAJOR calories! anyway... making this tomorrow for a nice sunday dinner after an hour hike - cant wait!

    It's not lo-cal but a small serving had 453 calories. Couple it with a decent sized salad and you can enjoy a 'denser' food but not break the calorie bank. It's really very good and you will have no idea it has cottage cheese in it. - 1/7/14

    Not exactly a healthier recipe. The calories are ok (for a dinner) but the fat isnt great and the sodium is awful. It doesnt seem much different from a regular homemade lasagna recipe. Could use improvement. - 9/25/08
