Shrimp & Broccoli Scampi

Ingredients
--1/2 box of Healthy Harvest Rotini Pasta (or whole wheat pasta of your choice)--2 Tbsp Extra Virgin Olive Oil--3Tbsp Butter--1 cup Broccoli (chopped, frozen or fresh)--1 Tbsp minced garlic--about 16 large cooked shrimp (deveined, tail removed, halved)--salt to taste
Directions
Cook pasta per directions...do not rinse after draining.

In a large frying pan add oil and butter over medium-high heat. Lightly brown garlic.

Add shrimp, toss for 2 minutes. Add brocolli. Cook on med-high for 5 more minutes, stirring occasionally.

Reduce heat to low and let simmer for 10 minutes, stirring occasionally. Pour pasta over mixture and combine. Serve immediately.

Makes 6 1 cup servings

    We really really liked this. I read the reviews and saw someone thought it was dry, so added 1/2 cup white wine while it was simmering. Not a lot of calories but saucier and tasted great. Also added 1 tsp white pepper. I will make this again. It's my 4 yr olds new favorite dinner. - 4/1/09

    If this recipe makes 6 servings, then each person only gets 2 or 3 shrimp in their whole meal? Maybe I'm still getting used to portion control... I still give it 5 stars, because it was delish, but I had to eat two servings to feel full! - 3/22/10

    The calories are off on this recipe, with 6 oz of pasta a serving could only be 1 oz not 1.33 oz, 90 calories not 130, I opted for less butter and oil, more shrimp and garlic and broccoli and some white wine and lemon that makes scampi for me, also some fresh parsley and thyme from the herb garden. - 8/24/14

    I've made this twice now and my husband & sons loved it. I also added a little white wine plus a squirt of unsweetened lemon juice while shrimp were simmering, & also thin slices of red bell peppers for some color & crunch. Used whole wheat linguine.     This is an excellent recipe. My family is changing our eating habits and having our big meals at lunch. This was just right for a big, but light meal. Tasted excellent. I used more lemon juice, but I also doubled the recipe - 4/26/11

    This was amazing! I simmered the ingredients in white wine and added a bit of reduced fat parm and crushed red pepper for a little kick. It wasn't at all dry served over angel hair pasta. Will definitely make again! - 1/27/11

    Since there was no real sauce, my hubby had to add extra olive oil to his pasta make it edible--and he LOVED it! I didn't, however (as I didn't want the extra calories) and found it tasty but really much too dry. Perhaps I did something wrong, though. (I used fresh broccoli and perhaps that's why.) - 7/1/07
