Quick Chicken-Corn Chowder

Ingredients
* Butter, salted, 1 tbsp * Onions, chopped 1/4 cup, * Celery, 1/4 cup, diced * All-purpose Flour, 2Tbs * Milk, 2%, 3 cup * Chicken Breast Boneless Skinless, 2cups, chopped * Sweet Corn, Fresh or frozen, 1.5 cup * Thyme, fresh, 1 tsp * Pepper, red or cayenne, 1/4 tsp * Salt, 1 dash * Corn, canned, cream style, 1 can (14 3/4oz) * Potato, raw, 1 cup diced
Directions
Melt butter in a large Dutch oven over medium heat. Add onion, and celery; cook for 3 minutes or until tender, stirring frequently. Add Flour; cook 1 minute, stirring constantly. Stir in milk and remaining ingredients. Bring to a boil; cook until thick (about 5 minutes).

    I used ubsalted butter and half the milk was low sodium chicken broth. I added a little extra red chili pepper to taste. It was delicious and a little lower in Na+. - 8/27/09
