Ingredients
1 cup uncooked oats - anything but instant and steel cut work well1/3 cup Splenda (or equivalent sweetner of your choice)1 cup unsweetened applesauce1 egg1 tsp cinnamon1/4 tsp salt1 tsp vanilla
Directions
Mix all ingredients and drop by big spoonfulls onto a prepared cookie sheet (I spray with Pam). Bake 15 minutes at 350. They are like little cakes - NOT a chewy oatmeal cookie. I made 10 of them with this recipe. I also used a calorie free liquid splenda, if you use granular splenda, account for the extra carbs.

    This is a good enough alternative to a traditional oatmeal cookie, but certainly unlike an cookie I have eaten in the past. I followed the directions exactly except that I had sweetened applesauce, so I used less Splenda. Expect a runny batter, but the result is cake-like. - 3/17/11

    My son is on a low glycemic diet and LOVED THESE! As did everyone else in the house. I prefer not to use the artificial/chemical sweeteners so I replaced Splenda with a 1/3 teaspoon of Stevia and it worked perfectly!

    I tweaked the recipe a little. I thought it looked too liquid-y, so I added flour about 1/2 cup I think. I also used regular sugar cause I don't have splenda on hand. And my favorite: I added chocolate chips! Totally worth it.

    These are really healthy cookies but they also are very dry. Plus it needed another spice to it like nutmeg to make it more flavorful. If you are going for healthy then these are great but they are really dry. - 12/2/11

    Very good. I followed the recipe exactly and they came out delicious. Next time I'm going to try using pumpkin instead of the applesauce and add some nuts. Cranberries, raisins or even butterscotch chips would be good if you wanted to be a bit naughty. - 5/4/10
