3/4 canned black beans, rinsed3/4 dry pink lentils3/4 dry brown rice1/2 yellow onion, chopped3 cups broth (chicken or vegetable)1/4 cup salsa1 tbsp taco seasoning
Mix all ingredients and bring to a boil in a large saucepan. Lower heat and let simmer about forty minutes, or until rice is cooked through.

I didn't have salsa, so I used a tomato and added a bit of spice to it. This makes a huge serving of super frugal food, made with ingredients that are easy to have on hand. Measure out everything the day before and start it as soon as you get in the door for a meal so brainless, zombies will flee. - 8/23/14
