Paper Baked Halibut

Ingredients
1/2 cup fresh snow peas1/2 cup red pepper, chopped1/2 cup carrot, cut into strips or slices1/2 cup onion, chopped1 clove garlic6 oz halibut Dash of salt and pepper
Directions
Julienne all of the vegetables and thinly slice garlic.
Cut 2 (about) 16"x16" hearts out of a piece of parchment paper.
On the fold in the middle of one heart place half the vegetables. Place the 3-5oz fish on top of the vegetables with half the garlic clove and salt and pepper to taste. Repeat for the other piece of parchment.
Fold half of the parchment over the fish and vegetables and starting from the bottom V fold the parchment over itself enclosing the fish and vegetables inside to make a little package.
Bake in the oven at 400*F for 10 - 15 minutes or steam for 10-15 minutes.
Enjoy!!! Can be served on brown rice with tzatiki.

    I changed up the veggies a little and had to bake 20 min for the fish to cook thru (maybe because there was exta veggies in the packet). Super low fat and healty. It was really delicious! - 4/18/11

    I made this recipe as it is listed and enjoyed it very much. The Halibut was tender and moist and the vegetables added greatly to the flavor. My health conscious friend and I really enjoyed this. It was worth taking the time to Julienne the vegetables by hand. - 5/15/13
