1 1/2 pounds cooked, skinless chicken breast1 1/2 cups water1 can diced tomatoes and peppers1 can tomato puree1 tbsp dried onions1 tbsp chili powder2 cups cooked rice
Dice chicken and set aside.
Make a sauce with the water, diced tomatoes, tomato puree, dried onions and chili powder. Cook 15 minutes.
Turn off heat. Stir in rice and chicken.

This was great! Since I didn't have cooked chicken, I thawed frozen chicken breasts, put them in a baking dish with the tomato products and baked, covered, in the oven. While the chicken was baking, I made the rice. Then I added the rice to the pan. Everyone in the family loved it! Thanks! - 1/8/08
