Broccoli/Cauliflower Cheese Bake

Ingredients
3 c broccoli chopped large2 c cauliflower chopped large2 tbsp pimentos (small jar)1/2 yellow bell pepper chopped1/2 c ricotta cheese1 c non fat cottage cheese1 c shredded sharp chedder3 oz shredded skim mozzarella
Directions
Combine, place in pan sprayed with non stick spray. Bake 325 for 15 min.

    I really enjoyed this recipie. I think next time I may cook the broccoli a tiny bit as the 15 min of cooking time did not seem to cook it all the way. I like that it is a high protein meal. - 12/4/09

    I didn't have half the ingredients, but this recipe's combination of cheeses really made it yummy! Next time, I'll have the pimiento, peppers, and broccoli, so it should REALLY be fantastic! Meanwhile, I'll enjoy the leftovers from this. - 3/24/15

    In a word: ew. 15 minutes is no where near long enough to even melt the cheeses let alone cook the veggies, and I'm pretty sure it's missing a base of some sort. To make this edible I think it needs a higher temp, more time, and sour cream or cream of __ soup to make it a casserole consistency. - 2/25/12

    I wish there was a 3 1/2 stars. This recipe would get a 4 for flavor and a 3 for texture. It tastes good, but the texture is weird. The cottage cheese and ricotta don't melt so they stay in clumps all around the veggies. (Note: presteamed the veggies 4 minutes and they were perfect.) - 8/16/11

    Interesting flavor..... I wish I had cooked the cauliflower beforehand so it would have been more "done".

    I like my veggies just cooked - not mushy at all. But baking this for almost 30 min, they were still raw. I had to mix it with my hands. I will not make this again. - 3/11/10
