A great dish that can use leftover, cooked chicken breast. A great dish that can use leftover, cooked chicken breast.

Ingredients

    2 cups shredded cooked chicken
    4 carrots, chopped
    4 stalks celery, chopped
    1 can cream of celery soup, 98% fat free
    6 oz non-fat evaporated milk
    1/2 oz dry sherry

Directions

Shred cooked chicken - about 2 cups.
Chop celery and carrots and microwave on high for 4 minutes, retaining some crispness.
Heat pan sprayed with cooking spray to medium low.
Add condensed soup and evaporated milk (I have also used 1% milk). Add sherry.
Add chicken and cooked vegetables.
Simmer until vegetables cook a bit more.
Add seasoning as desired - thyme and parsley work well with this dish.
Serve over rice.

    Quick and delicious. I substituted 98% fat free cream of chicken soup because that's what I had on the shelf. Great comfort food using ingredientsI typically have on hand. - 11/25/08

    This recipe was quite good. I forgot to add the thyme for the extra taste so it was a little bland for us but will definitely make it again NOT forgetting to add the thyme. - 5/29/08
