Introduction
All-in-one breakfast muffin tastes nicely along side with a hot cup of coffee. All-in-one breakfast muffin tastes nicely along side with a hot cup of coffee.Number of Servings: 12
Ingredients
-
For biscuits:
2 cups of all-purpose flour
3 tsp baking powder
1/2 teaspoon (tsp) salt
8 Sausage links cut up into small pieces mixed in
then:
1/4 cup shortening
3/4 cup milk
4 eggs wisked
1/2 cup bell peppers (I used orange ones, the yellow and orange ones are more sweet)
oil, shortening or butter to grease muffin pan
Directions
Preheat oven to 400 and then grease a (I used olive oil) a 12-cup muffin tin.
In a bowl combine first 3 ingredients, mix well. Add cut-up sausage links and mix well. Then with pastry blender or fork mash in shortening until it's blended. Warm up your milk for 20 seconds in the microwave, if you wish, to make it easier to blend- blend gently just enough to get all flour moist, do not overwork unless you want flat biscuits, my mom always told me. :)
Then divide the batter. Push down the middles with spoon, or much easier, your finger (use oil so your fingers don't stick to the batter) so theres enough room for the eggs. Divide the wisked eggs between the 12. Sprinkle the bell peppers on top of each muffin, and smush them down into the batter with a spoon or fork.
Put the muffin tin in the oven, cook for 20 mins or until done. Enjoy!
