Ingredients

1/4 cup country crock + calcium
1/4 cup unsweetened applesauce
1 cup splenda
1 cup packed light brown sugar
1 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
1/3 cup all whites egg substitute
2 tsp vanilla extract
1 cup all purpose flour
1 cup whole wheat flour
3/4 cup butterscotch morsels
1/2 cup coursely chopped cashews
Directions
Preheat oven to 375 degrees.
In a large bowl, beat margarine and applesauce with an electric mixer on medium for 30 seconds. Add splenda, brown sugar, baking powder, baking soda and salt. Beat until combined, scraping side of bowl occassionally. Add egg substitute and vanilla; beat until combined. Beat in as much flour as you can with the mixer. Using a wooden spoon, stir in remaining flour. Stir in cashews and butterscotch pieces.
Drop dough by rounded teaspoons 2 inches apart onto an ungreased cookie sheet. Bake in preheated oven for 8 to 10 minutes or until edges are lightly browned. Transfer cookies to a wire rack to cool completely.
