Ingredients

3 medium sized yams
1 cup of orange juice
2 T. orange zest
1/3 cup white sugar
1/3 cup brown sugar
1 T. cornstarch
pinch of salt
3 T. butter
Directions
Cut yams in quarters. Cook at a slow boil until fork tender (with skins on). Drain and remove skins. Place cut side down in casserole dish.
Melt butter in sauce pan on stove. Add dry ingredients. Whisk in orange juice and cook on medium high until slightly thickened. Pour over yams.
Bake in 350 oven for 50 minutes.
