Introduction

Ingredients

    1-1/4 c. soymilk
    1c. pumpkin puree (unsweetend canned is fine)
    2 c. wheat flour
    1/2 tsp. grated nutmeg
    1/2 tsp. cinnamon
    1/2 tsp. ground allspice
    1 T. sugar
    1 tsp. salt
    2 tsp. yeast
    2 eggs
    2 tsp. vanilla

Directions

Combine all ingredients with a whisk. Use a large bowl, as the batter will rise overnight.

Cover with plastic wrap and refrigerate overnight.

Butter a waffle iron and cook in the morning. If batter is super thick, add a little more soy milk if you'd like!
