1 tbsp garlic flavored oil or olive oil
8 ounces fresh mushrooms, sliced (about 3 cups)
1 small onion (about .5 cup)
2 tsp Cajun seasoning
8 cups (about 1 pound) torn fresh Kale, alrge stems removed
1 medium tomato, chopped (about 1 cup)
Heat oil in a large nonstick skillet over medium-high heat. Add mushrooms and onion; cook, stirring, until tender, about 5 minutes. Stir in Cajun seasoning. Reduce heat to medium.
Stir in kale. Cook, stirring, just until kale is tender, about 6 minutes. Stir in tomato and heat until just warm, about 1 minute.
