Ingredients

    I got this recipe from a Weight Watcher's meeting, and found these very tasty. This recipe is low in fat and calories. I also tried 1 box of cake mix with a cherry lite pie topping - very tasty. My kids loved both muffins. (for Weight Watchers: each muffin is only 2 points.)

    1 (15 ounce) can pumpkin
    1 (18 ounce) box cake mix (yellow, white, spice)

Directions

1. Mix both together until smooth.
2. Spoon into muffin tin (either lightly sprayed or with muffin cups).
3. Bake as directed on cake box.
4. Makes 38 mini muffins at 1 point each; 24 muffins is 2 points a piece.

    Incredible!
    Also good with some raisins or nuts thrown in, if you like them. I usually add an egg and some water (1/3 cup) for better consistency. Can also make a wonderful cake with one box angel food cake and one can crushed pineapple. There are lots of good two ingredient recipes out there. - 10/19/13

    This recipe is awesome, I added a tsp of pumpkin pie spice, and I use only the spice cake mix. Very good!!!! - 10/28/10
