Introduction

Just the recipe for the dressing. I left out the almonds b/c I don't think they're essential (I usually use them, but naa for now). I don't know the nutritional info for the 1/2tsp dry mustard powder and there wasn't info for caper brine so I upped the calculations to account for 2 tbsp capers.

Also, I accidentally left the 1/4c olive oil out, but I tried it without, and I think it was pretty good! So add it if you want.

Ingredients

    Caesar dressing:

    1/3 cup blanched, slivered or sliced almonds

    3-4 cloves garlic, peeled and crushed

    3/4 lb. silken tofu (fresh, not vacuum packed is best)

    1⁄4 cup olive oil

    3 tablespoons fresh lemon juice

    1 heaping tablespoon capers

    4 teaspoons caper brine

    1 teaspoon sugar

    1/2 teaspoon dry mustard powder

    salt to taste

Prepare the dressing:
In a food processor or blender, pulse the sliced almonds till crumbly. Empty ground almonds into an air tight container that you’ll be using to store the finished dressing in. Place garlic, tofu and oil in food processor or blender and blend until creamy. Add lemon juice, capers, caper brine, sugar, dry mustard powder and pulse until blended. Adjust lemon juice and salt to taste. Pour into container with the ground almonds and whisk to combine. Cover and allow dressing to chill in the refrigerator for a minimum 30 minutes, optimally 1 to 1 1/2 hours.

    My family has really been missing those Caesar salads from Costco since we became vegan. But no more! This salad dressing is excellent! - 8/12/09

    Very Good
    I've made this per the recipe. I loved it, rest of the family found it too creamy. This makes more dressing that you might expect, and so if you just use a tablespoon on a serving of salad the calories you're getting is not much. (I used panko crumbs instead of croutons on the salad, was yum!) - 7/10/12
