This is a quick take on traditional chicken mole. While you might not normally combine, peanut butter, chocolate and cinnamon with chicken, the results are wonderful! Number of Servings: 8

Ingredients

    3-5 lb whole roasting chicken
    1 can tomato paste
    1 T chicken base
    1 can chicken broth
    1/4 cup brown sugar
    1 tablet Nestle Mexican chocolate Abuelita or 1 cup semisweet chocolate chips
    1/4 cup chili powder
    2 T ground cumin
    2 T cinnamon
    1/2 cup creamy natural peanut butter

Directions

Place all ingredients, except chicken in a crock-pot on high. Stir until chocolate begins to melt. Add chicken, cover and cook on high for 6-8 hours. It will be falling off the bone. Remove chicken to a platter and strain the sauce through metal strainer. Remove the fat from the sauce after it has separated. Check for saltiness and add more if needed. Get as much meat off the bones as possible. I serve this with warm tortillas, burrito style, with sour cream and shredded cheese, or over rice.
