Vegan Quick Minestrone

canned cannellini beans, 15 oz can
Organic Vegetable Broth, 5 cups
Elbows Pasta, 1/2 cup
Onions, raw, 1 cup, chopped
Garlic, 3 clove
Carrots, raw, 1 cup, chopped
Swiss Chard, 2.5 cup, chopped
Tomatoes (stewed), 2 cup
Green Beans (snap), 1 cup
Zucchini, 1.5 cup, sliced
Savoy or Napa cabbage, 1 cup chopped
Olive Oil, 2 1tsp
Thyme, fresh, 3 tsp
Pepper, black, 1 tsp
Add vegetable broth and pint of canned tomatoes. Bring to a boil and reduce to simmer. Add chard that has been torn into bite sized pieces, chopped savoy cabbage leaves, green beans and zucchini.
Simmer for 5 minutes.
Add pasta and drained, rinsed beans.
Simmer until pasta is cooked through. Season with black pepper and salt if desired.
