Sweet Potato Minestrone with Turkey Sausage

Ingredients

1 teaspoon olive oil
1.25 pound sliced turkey sausage
1 large onion
1 rib chopped celery
4 cups low-sodium turkey broth
3 medium, peeled, diced sweet potato
1.5 cup sliced zucchini
1.5 cup sliced summer squash
2 - 15 ounce cans great northern beans
2 teaspoon dried oregano
1/4 teaspoon salt
1/2 teaspoon black pepper
6 ounce baby fresh spinach
Directions
1. Heat the olive oil in a soup pot over medium heat. Add the sausage slices and cook until lightly browned. Add the onion and celery. Cook until soft, about 5 minutes.
2. Add turkey broth, sweet potatoes, zucchini, summer squash , beans, oregano, salt and pepper. Bring to a boil then reduce heat and simmer, partially covered, for 30 minutes.
3. Stir in spinach and cook until the leaves wilt, about 2 minutes.
Make Ahead:
Prepare the soup without the spinach a day or two in advance. Add the spinach leaves just before serving.
Makes approximately 10 - 1 cup servings
