Chicken & Fruit Salad

Introduction

Number of Servings: 1

Ingredients

    1 small Apple - Sliced or chopped
    1/2 Cup Grapes Cut in half or thirds
    1 cup lettuce (can be chopped if you desire)
    2 oz canned chicken ( or 2 oz chopped baked chicken breast)
    1 tbs reduced fat Best food mayo

Directions

Drain chicken and measure 2 oz
mix with Mayo
Gently add sliced grapes

Make a bed of the lettuce
Place apple slices in a circle (fanned out) on the lettuce
Place chicken and grape mixture in center

If you are preparing this salad to go (perhaps for work) do not slice apple until last minute as it will turn brown.

  • I think I would want to trade out the mayo also. Even tho there's a lot of fiber, that's a lot of fat. It sounds like a great way to get more fruit tho. - 4/28/09

  • I "sorta" made this. Roast chicken, grapes, apples, mayo. a squirt of fresh lemon juice to keep the apples from turning. I will put this on my salad for lunch tomorrow! :-) - 10/9/07

  • Dip the apple slices in lemon juice and they will not turn brown. Fat free plain yogurt in place of the mayo and you have a very good salad. - 4/30/07
