Introduction

This is a recipe I made up on the fly one night and now I love it! I split this into 6 servings for a side dish, but you could definitely add any meat/tofu and make this an entire meal! This can easily be made vegetarian if you use vegetable broth or just water to cook the rice! This is a recipe I made up on the fly one night and now I love it! Ingredients

    For rice:
    1 cup brown rice
    1 TSP olive oil
    3 dashes salt
    2 cups unsalted chicken stock
    1/2 cup water

    Add to rice after cooked:
    1 TSP olive oil
    6 TBSP Asiago shredded cheese
    3 TBSP sliced almonds (I use almond accents)
    3 cups frozen peas

Directions

Set 3 cups of peas out on counter to let them defrost.

Add 1 cup brown rice, 1 TSP olive oil, 3 dashes salt, 2 cups unsalted chicken stock and 1/2 cup water to a rice cooker. If you don't want to use a rice cooker, cook rice your own way. If you are using white rice, you will not need as much liquid to cook.

After rice is cooked, add 1 TSP olive oil, 6 TBSP asiago shredded cheese, 3 TBSP sliced almonds and 3 cups peas. Mix all together and serve! Makes 6 servings that are roughly a cup each.
