    Ingredients:

    * *Tilapia filet, 16 oz total (four pieces)
    * Bread crumbs, dry, grated, plain, .5 cup
    * *Coconut, shredded, 1/2 cup
    * egg white, fresh, 1 large
    * Pepper, red or cayenne, .5 tsp

Directions

Mix together bread crumbs, coconut, and cayenne. Dip tilapia in egg white and roll in bread crumb and coconut mixture. Place on a baking sheet that has been sprayed with cooking spray and bake at 375 until done and brown, about 20-25 minutes.
