Ingredients

    3/4 cup (6 ounces) herb stuffing mix ?
    2 medium celery stalks, chopped (1 cup)
    1 medium tart cooking apple, peeled and chopped (1 cup)
    1 medium onion, chopped (1/2 cup)
    1 cup dried cherries
    1 cup FF chicken broth (from 32-ounce carton)
    6 pork boneless loin chops, about 1/2 inch thick

Directions

1. Spray inside of 4- to 5-quart slow cooker with cooking spray.
2. Mix all ingredients except pork. Place half of the stuffing mixture in slow cooker; top with pork. Spoon remaining stuffing mixture over pork.
3. Cover and cook on low heat setting 6 to 8 hours or until pork is tender.

    I tried this recipe tonight and the flavor was good, but I would cut down on the amount of liquid next time due to being cooked in the slow cooker The stuffing was a little to soggy for me - 9/17/09

    Delicious, and thank you for the corrected entry. I did a recipe makeover for the ingredients I used, and ended up with almost 400 calories a serving. Probably will look for ways to cut calories in the future by using unsweeted dried fruit and more pork/less stuffing ratio. - 10/16/13
