Introduction

Ingredients

    1/4 cup chopped bell pepper (any color)
    1/2 medium red onion, chopped
    1/3 large cucumber, chopped or sliced
    2 large radishes, halved and sliced
    1 medium tomato, chopped
    1/4 cup extra virgin olive oil
    1/2 cup red wine vinegar
    herbs and salt and pepper to taste

Directions

Place all vegetables in a medium bowl with cover. Mix olive oil, vinegar, and herbs in a small bowl and whisk until blended. Stir into raw vegetables. Keep refrigerated. Add 1/4 cup to 2 to 3 cups of lettuces and/or spinach for an easy salad.
