Used Broccoli & Cheese instead of the mixed veggies; low-fat shredded mozzarella instead of cheddar; and 1/2 tsp powdered mustard instead of Dijon. It was a bit bland but it did hit the creamy mac n cheese spot! Of course, if I used cheddar it probably would have helped.
