Honey Ginger Grilled Salmon

Fresh Ginger, mincedGarlic, mincedSoy sauce (low sodium), 1/3 cupOrange juice, 1/3 cupHoney, 1/4 cupGreen onions, chopped, 1/3 cup4 small Salmon filets (about 4 oz. each)
Combine all ingredients in a large ziploc bag, and refrigerate for 15-30 minutes to marinate the fish. Remove from bag and grill until it flakes with a fork. I use a George Foreman grill, which takes about 7 minutes. On a regular grill, it would take longer.
Optional: While fish is cooking, put leftover marinade in a saucepan and cook over medium heat, stirring often, to reduce it to a thick sauce. Spoon over fish.
Makes 4 servings, and is great with rice.

Just tried this recipe for the first time and it's DELICIOUS!!! Tried broiling for 10 mins as some suggested, but that wasn't enough and didn't realize it until we'd already sat down to eat :(. Lesson learned, will try baking and then broiling next time. Served with brown rice and stir-fry veggies. - 4/25/13
