Ingredients
3 cups white sugar (or substitute)1 cup eggs substitute (Ener-G v)2/3 cup water2 teaspoons baking soda1 teaspoon baking powder1 teaspoon ground allspice3 1/2 cups all-purpose flour2 teaspoons salt1 teaspoon ground nutmeg1 teaspoon ground cinnamon1/2 teaspoon ground cloves1 (15 ounce) can pumpkin puree (or fresh sugar pumpkin puree)1 cup chopped walnuts1 cup raisins1 cup canola oil
Directions
1. Preheat oven to 350 degrees F (175 degrees C). Spray three 7 x 3 inch loaf pans.
2. Mix oil, sugar, and eggs together in a large bowl. Mix in pumpkin puree and water. Stir together flour, soda, baking powder, salt, and spices. Add to the pumpkin mixture, and mix until just combined. Stir in nuts and raisins. Divide batter into prepared pans.
3. Bake for approximately 1 hour or until toothpick comes out clean. Cool on wire racks.

    This was pretty easy to make in spite of all the ingredients, and it turned out delicious. I substituted applesauce for the oil and used whole whear flour for half the flour called for to make it a little healthier. - 1/9/08

    I feel 215 calories a slice is high and much healthier ingredients could be used to cut back on the excessive amount of sugar and the oil used in it. It needs a makeover. I make pumpkin muffins/bread with oatmeal, oat flour, flaxseed meal, greek yogurt,

    I thought there was a lot of oil and sugar too on first glancing at the recipe. On closer reading, it makes 3 loaves so that is only 1/3 c oil for an entire loaf but to a little more than 1 c. flour.

    a CUP OF OIL??!!! My word. THEN canola oil? The worse oil you can use....I would use OLIVE oil, AND only half the amt. and applesause for the rest! Would work out just fine. THEN use 1/ whole wheat flour, and regular.

    This is the first year that I have not made pumpkin bread...I use wheat flour, and much less of the sugars and oil. Sometimes I add oats to the dry ingredients. I use lots of raisins and walnuts. Soak the raisins in the water to make them plump before adding to ing. I also add rum extract. Yummo! - 12/17/08

    I had to substitute applesauce for oil (I was out) but everyone who tried it absolutely loved it and wanted more. Oh, I also cut back on some spices that my family wouldn't like in the larger quantities. And I had to substitute lemon/coconut sugar for some of the sugar (couldn't run to the store) - 10/11/10

    I cut the sugar in half & used half whole wheat flour. I left out the raisins and nuts. I came out with delicious bread that was 85 calories a slice. Amazing! - 12/1/10
