Abby's Healthy Corn Bread

Ingredients
1 c. White Flour1/4 c. Wheat Flour3/4 c. Corn Meal1/4 c. Sugar2 tsp. Baking Powder1/4 tsp. Salt1 c. Nonfat Milk1/4 c. Applesauce1 Egg
Directions
Mix dry ingredients in a bowl.
In another bowl, beat egg. Add remaining wet ingredients.
Add wet ingredients to dry ingredients.
Mix just until moistened
Bake 400 degrees for 20-25 mins.
Makes 16 2-inch squares.

    After reading from some of the comments that this was dry, I added 1/3 c. applesauce instead of 1/4 c. It came out very moist, fluffy, and surprisingly sweet. I absolutely loved it! Thanks! - 11/16/11

    I used 1/2 cup of unsweetened applesauce as I had an abundance of it with nothing to use it for, when I ran across this recipe just in time to plan it to go with a dinner of Diet Coke sloppy joes.     I'm all about eating healthy but it is hard to find a great tasting, healthy corn bread recipe that is as tasty and moist as the unhealthy recipe version. All I could taste was the wheat flour..blah. I wouldn't make this recipe again. - 10/9/12

    Definitely not a 9x13 size, but I didn't realize that until after I had put the batter in the pan. I think to feed a family, this recipe should definitely be doubled. I used all whole wheat flour though, and that is pretty tasty.

    I used wheat pastry flour and used 1/2 cup of it and 3/4 cup of white flour. The applesauce gives the bread just a bit of sweetness. My hubby liked this better than regular cornbread mixes we used to make. I think this will be our regular now! - 10/31/10
