Introduction

A nice light textured lower fat muffin with a mild peanut butter flavor enhanced with a pocket of jelly inside. Quite delicious if you like peanut butter and jelly! Ingredients

    2 cups whole wheat flour
    1 tsp. Baking powder
    1/2 tsp. Baking soda
    1/3 cup sugar
    1/2 tsp salt

    1 cup applesauce
    2/3 cup peanut butter
    2 Tbsp. Honey
    1 tsp. Vanilla
    1 tsp. Vinegar
    1 cup milk (or up to 1/2 cup more if necessary)

    1/2 cup jam or jelly of your choice

Directions

Heat oven to 350 and prepare a muffin tin. Mix dry ingredients in large bowl. Mix wet ingredients in a smaller bowl (I mixed in only 1 cup of milk at this time). Mix the wet ingredients into the dry ingredients. Add more milk if the batter seems too thick. Fill muffin cups 1/2 full, spoon 1/2 teaspoon of jelly on top of batter. Add another tablespoon or so of batter covering the jelly so that the muffin cup is about 3/4 full. Bake at 350 degrees for 15-20 minutes. I baked mine or 17 minutes and they were perfect. I got 21 muffins from this recipe.
