Ingredients

    Batter:
    2/3 cup whole wheat flour
    2 tsp baking powder
    1 egg
    6 tbsp 2% milk
    3 tbsp honey
    2 tbsp canola oil

    Filling:
    1 cup chopped apple (I don't peel mine)
    cinnamon to taste
    nutmeg to taste

Directions

This recipe makes 6 muffins.

1. Whisk the wet ingredients until the honey dissolves.

2. Add the dry ingredients and stir until incorporated, but lumpy.

3. Stir the filling in gently.

4. Divide mixture into a muffin pan (with paper liners if desired).

5. Bake at 375-400F for 15-20 minutes, depending on your oven. Just keep an eye on them, they get pretty dry when overcooked. I bake mine for 15 minutes at 375F.

6. You'll make this one over and over again! So easy, tasty, healthy and affordable.

7. You can add a little sweetener to your batter if you find that just honey isn't sweet enough for you.
