    Spam (lite) 12 oz - fine dice
    Boneless, skinless chicken breast (12 oz) - fine dice
    Jasmine rice 3 c uncooked
    Chicken broth 4 c
    Frozen peas and carrots 5 oz
    Frozen corn 1 cup
    Soy sauce
    Garlic - minced
    Peanut oil
    3 med eggs - beaten
    Nonstick cooking spray


Prepare rice: heat 4c chicken broth to boiling, reduce heat, add rice. Cook until rice is done
Beat eggs
Heat wok, spray with nonstick
1T peanut oil
stir fry egg, remove to bowl for later
stir fry finley chopped spam, chicken, soy to taste and minced garlic until spam is crispy and chicken is done. Remove to a bowl for later.
Add 1T oil, stir fry veggies with soy sauce until not frozen.
Add back in meat and eggs.
Add in cooked rice
Stir fry/mix well.
Season to taste.
