Introduction
This recipe was passed down from my great grandmother Letitia Rickitts to her daughter, who passed it onto her daughter-in-law, my mother. It is not too sweet, a cookie that is crisp on the outside and soft inside. Delicious with coffee or tea. Ingredients

1 cup butter or shortening
1 cup sugar
2 eggs
3 cups flour
1 tsp. baking powder
1 tsp. baking soda
1 tsp. salt
1/4 cup buttermilk (or sour milk)
1 tsp. lemon extract
1/4 tsp. vanilla extract
1/4 tsp. almond extract
dash nutmeg
Tips
Can substitute 1/2 c. butter and 1/2 cup shortening for 1 cup butter. For stronger flavor, use 1 tsp. vanilla extract and 1 tsp. almond extract. Grandma Rickitts made larger cookies (3-in. diameter), but I like the smaller size.
Directions
Cream butter and sugar (or shortening). Add eggs, buttermilk and extracts. Sift dry ingredients together and add, beating until well mixed and dough is stiff enough to roll out (add a little flour to stiffen dough if needed). Roll out dough to 1/4 inch thickness and cut out circles about 2 in. in diameter using cookie cutter or edge of a drinking glass. (Alternatively, make small balls and flatten them with your hand or the flat bottom of a drinking glass.) Place on greased cookie sheet. Bake at 450 degrees about 8 minutes.
Serving Size: Makes about 5 dozen 2-in. cookies or 4 dozen 3-inch cookies.
