Ingredients

    1 cup Buttermilk, lowfat
    1 cup Oat Meal (Quaker Oats - Old Fashioned - dry)
    0.5 cup Whole Wheat Flour
    .5 cup Wheat flour, white, all-purpose, enriched, calcium-fortified
    2 tbsp Bob's Red Mill Flax Seed Meal (2 Tbsp)
    .375 cup (8 fl oz) Water, tap
    2 tbsp Crisco Pure Vegetable Oil
    1 cup, halves Strawberries, fresh
    1.5 tsp Vanilla Extract
    .5 tsp Baking Powder
    .5 tsp Baking Soda
    1.5 tbsp Honey
    1.5 tsp cinnamon

Directions

soak oats in buttermilk for 20 minutes. Meanwhile, mix all dry ingredients. Mix flax meal with 6 tbsp. water (egg replacement). Stir wet and dry ingredients into oat mixture, mix well. Gently fold in strawberries. Cook on pre-heated nonstick griddle 4-5 minutes per side until done. Cool on rack completely, then freeze for easy weekday breakfasts!
