Ingredients

    BRAN FLAKE MUFFINS

    Mix in large pan: 6 1/2 cups Wheat Bran Flakes
    5 cups Flour
    3 cups Sugar
    2 teasp. Salt
    5 teasp. Soda


    Mix in a medium size bowl:
    4 beaten eggs
    1 cup Cooking oil
    1 Tbs. Vanilla
    1 qt. Buttermilk

Directions


Pour this all over Bran mixture and stir enough just to mix well.

Store in large covered container in refrigerator for at least 24 hours before baking any.

Bake in 400 deg. oven for 12-15 minutes.
Stir before each baking batch.

Will keep up to six weeks in refrigerator.

I usually make a tin of 6 in the morning for my husband & to take to work. If all 6 weren't eaten, I put them into a freezer bag stockpiling the remainder for later. I would say that this recipe lets me make 6 - 8 trays, so that is 56 muffins, roughly.
