Ingredients

    2 tablespoons orange juice
    2 tablespoons Dijon mustard
    1/2 cup reduced fat whole wheat cracker crumbs or bread crumbs
    1 tablespoon grated orange zest (peel)
    1/8 teaspoon onion and/or garlic powder
    1/8 teaspoon freshly ground pepper
    1/8 cup egg substitute
    5 tablespoons white wine
    4 skinless chicken thighs

Directions

* Preheat oven to 350 and spray cookie sheet with Pam or something similar.
* In a small bowl, combine the orange juice, mustard, egg and white wine.
* In another bowl, combine the cracker crumbs or bread crumbs, orange zest, onion and/or garlic powder and pepper.
* Brush the chicken on both sides with the mustard mixture, then dredge in the crumbs, firmly pressing the crumbs to coat both sides.
* Place the chicken on the baking sheet.
* Bake 20 minutes, turn and bake another 20-30 minutes longer or until meat is not pink inside.
