Ingredients

    Ground beef, lean, 8 oz
    Onions, raw, .5 cup, chopped
    Beans, red kidney, 1 can, drained and rinsed
    La Victoria Enchilada Sauce, 10 oz. can
    Corn Muffins Mix (and ingredients on box)
    Cheddar or Colby Cheese, Low Fat, 2 oz
    *Green Chili Peppers, 4.5 oz. can

Directions

makes 4 servings.
Cook beef and onion till brown.Drain.Stir in beans & enchilada sauce.Place in 3 1/2 or 4 1/2 qt. slow cooker.
Small bowl, mix, muffin mix as directed on packcge, add cheese and chilis.Spoon over beef mixture in slow cooker. Cover cook on low 5-6 hours or till done.
