I made this the other day to take in my school lunch, and it turned out pretty good! Brown rice is always really filling and has low calories. Love this recipe. Ingredients

1/2C Uncooked brown rice (Will make about 1 1/2 C cooked rice)
1C of mixed vegetables (I used frozen ones)
1Tbsp Soy Sauce (Works just as well with sodium reduced soy sauce)
About 1tsp of seasame oil or whatever other oil you want to use. I liked the flavor seasame oil gave.
Tips
My serving sizes are quite small! One person could eat all of this in one sitting, but if you split it so there are 3 servings, there will be a total of 76.2 calories, and if you split it between 4 servings (this is what I did and they were all about 100g each) it has 57.1 calories.
As I've said, this recipe is very filling! Tastes just as good the next day. :)
Directions
Cook the rice according to directions using the absorption method. Empty rice from pan.
Heat the oil in same pan, then add the rice, mixed vegetables and soy sauce and cook till the rice is slightly crispy.
Sorry this is pretty brief, but I literally chucked it all together and it turned out pretty well!
