My friend Sarah brought us a delicious traditional Slavic dish called haluski the day we moved in to our house. Cabbage and onions are roasted with celery seed and butter, then tossed with egg noodles. Delicious? Yes. Healthy? No. I lightened it up a bit. Ingredients

1 head cabbage, chopped
1 onion, chopped
1 t celery seed
2 T olive oil
2 T Earth Balance
2 slices whole wheat bread, toasted and processed into crumbs

Directions
Preheat oven to 425 degrees Fahrenheit.
Cut the butter into cubes. Place half in the bottom of a large baking dish, along with half of the olive oil. Layer on the cabbage and onions. Top with the remaining butter and oil, then sprinkle on the celery seeds.
Bake for 30 minutes, stirring halfway through. After 30 minutes, remove the lid, stir again, and sprinkle on the breadcrumbs. Bake another 15 minutes, uncovered.
Serve immediately.
Makes 10 one-cup servings.
