Introduction

I never have cream, but i've used Milk with success. I never have cream, but i've used Milk with success.
Number of Servings: 12

Ingredients

    1 1/3 c sifted all purpose flour
    2 1/4 teaspoons baking powder
    1 tbsp sugar
    1/2 tsp salt
    1/4 c cold butter
    2 eggs
    1/3 cup cream (I use 1% milk, and that's what the nutritional info is using)

Directions

Preheat oven to 450
sift first four ingredients together in a large bowl
cut in cold butter with a pastry blender or two knives, until the butter chunks are the size of small peas.

In a separate bowl beat 2 eggs. Set 2 tbsp of this aside for a glaze. Into the remainder beat in the milk/cream

Make a well in the dry ingredients. Pour the liquid into it. combine with a few swift strokes. Handle the dough as little as possible. Place it on a lightly floured board. Pat until 3/4 inch thick. cut with a knife into diamond shapes or wedges. Brush with the reserved egg, and sprinkle with a bit of salt or sugar.

Bake 15 min.

    Have made the 'Joy of Cooking' recipe for these scones for years. NOT the same recipe. WAY too wet, and yields NOWHERE near 12. Baked up Ok, at 425. http://www.food.com/recipe/scones-to-die-f
