Ingredients

    1 lb. boneless and skinless chicken breast, cubed
    2 Tablespoon olive oil
    1 cup chopped onion
    1 cup green bell pepper strips
    1 cup red bell pepper strips
    1 Tablespoon corn starch
    1/4 cup Kikkoman lite soy sauce
    1 8-oz. can chunk pineapple
    3 Tablespoons apple cider vinegar
    3 Tablespoons packed brown sugar
    1/2 teaspoon ground ginger
    1/2 teaspoon garlic powder

Directions

Brown the chicken cubes in oil, then place on a plate and keep warm.
Saute onion, red and green peppers until crisp tender, then add the chicken back into the pan.
Mix the cornstarch and soy sauce together and add to pan.
Add the pineapple (with juice), vinegar, brown sugar, ginger and garlic powder to pan and stir to mix well.
Bring to a full boil, then reduce heat to low and simmer for 15-20 minutes, until sauce thickens.

Serve over cooked rice.

    I noticed that the calorie count was off on this. It shows 4 oz. of chicken breast is 20 calories, when it should be 125. I think this comes from an error in the calculator. It shows 125 calories for 4 oz. and 20 calories for 0.25 pound, which is the same amount. - 1/9/12

    Very nice recipe. Easy to make and the taste was very good. My wife loves brown sauce sweet and sour chicken, so i will be making this more often. I too added 3/4 cup of water, but it was a little thin, so next time i will cut to 1/2 cup. Thanks for sharing. - 1/11/09

    Yum!! Absolutely love this and it really hits the spot when craving Chinese takeout!
    I omitted the peppers and added sliced carrots~ delish! The whole family~ even the 1 yr old~ LOVED it too!
    This will definitely be one of our regular dinners! Great for guests too!

    If there were 10 stars, this would get 10! Absolutely delicious. I will make it again. I heard that genuine sweet and sour is equal parts catsup, sugar and vinegar, so added 3 Tablespoons of catsup. (adds a bit more carbs, but turned out better than eating out! Thank you HappyWalker!!! - 9/8/10

    AWESOME! This was the best meal I have made since I started cooking at home again. Aaaaand it was the first time my husband actually ate some of my food since I have been cooking low calorie foods. All I changed was I added 1/2 c water durring the simmer. And thats saying alot for me. - 1/16/09
