Ingredients

    1 teaspoon ancho chili powder*
    1 teaspoon cumin seed
    1/2 teaspoon oregano
    1/4 teaspoon red pepper flakes
    1/2 teaspoon garlic powder or dried garlic

    * or your favorite chili powder


Tips

To make it a marinade: Combine the rub with the zest and juice of one lime, plus 1 T vegetable oil. Pour over the meat, cover and refrigerate for 1 hour or overnight.


Directions

Combine all ingredients in clean coffee grinder or blender. Pour into a glass jar or covered container. Store in a cool, dry place away from light for up to six months.

Yields 1 batch.

Big-Batch Measurements:

    Because it's so difficult to clean a coffee grinder, I use a mortar and pestle to grind spices. This also makes it easier to get exactly the texture I want. - 5/27/12

    Always looking for good, salt-free seasonings. But, I think the calorie count is wrong for 1 serving. If 1 TBSP flavors 1 pound of protein, that's really at least 4 servings. Most servings of protein are 3-4 ounces. I wouldn't even count calories for the seasoning. - 5/27/12

    This is my new go to for chicken fajitas. I love it. I also use cilantro. It is even better after it sits overnight after cooking. - 5/21/13
