Introduction

Adds the sweetness of buckwheat to a (relatively) small amount of sugar, making for a nice variation in breakfast. Can be reheated to eat on the go. Our favorite waffles. Ingredients

    2 c. Arrowhead Mills organic buckwheat flour
    1 c. bread flour
    4 t. baking powder
    1 1/2 t. baking soda
    4 T. granulated sugar
    1 t. salt
    6 large eggs
    3 c. buttermilk
    1 c. unsalted butter, melted and cooled

Directions

1. Heat your waffle iron (preferably non-stick)
2. Combine all the dry ingredients in a medium or larger bowl.
3. In a large bowl, beat the eggs until they are fluffy. Add the buttermilk and butter, mixing well.
4. Stir in your dry ingredients until barely blended with the wet ones.
5. Pour batter onto waffle iron, and bake about 5 minutes each (until steaming stops).
6. Serve immediately with whatever you like on waffles, saving a few for snacking later in the day or quick meals on the fly.

Serving Size: Makes about 9 8-inch square waffles
