Introduction

Stack Mexican wedding cookies together to make snowmen stacks! Stack Mexican wedding cookies together to make snowmen stacks!

Ingredients

    1 cup unsalted butter, room temperature
    1/2 cup powdered sugar
    1 tsp vanilla extract
    1 3/4 cup flour
    1 cup nuts (pecans are traditionally used)
    Additional powdered sugar to roll them in
    1/2 cup coconut
    chocolate chips and other candy for decoration (calories not included), plus ribbon (optional)

Directions

Cream butter and sugar, then add vanilla. Slowly add flour, and then nuts. You can use any type of nut you like, pecans are traditionally used. Bake at 275 degrees for 40 minutes.

Roll in powdered sugar and coconut when slightly cooled. Stack three on top of each other, using toothpicks if necessary.

Decorate with candy and serve.

Makes 48 cookies.
