Ingredients

1 cup dry quinoa
1 tsp olive oil
8 sundried tomatoes (not packed in oil)
2 tbsp finely chopped onion (or shallots)
2 tsp minced garlic
2 cups low sodium chicken broth
dash cayenne pepper
2 tbsp fresh cilantro
1 tsp sea salt
freshly ground black pepper
Directions
1) Rinse quinoa. Set aside
2) Heat oil in a pan. Add tomatoes, shallots and garlic. Saute for 3-5 minutes. Add broth (or water) and bring to a boil. Stir in quinoa and cayenne. Reduce heat and simmer for 30 minutes, or until liquid is absorbed. Let stand 5 minutes. Fluff with fork, and stir in remaining seasonings.
