Ingredients

    Raspbery Clafouti

    * 1.5 cups blueberries
    * 1 cup sliced strawberries
    * 1 cup blackberries
    * 3 eggs
    * 1 c skim milk
    * 2/3 c flour
    * 1/4 c sugar
    * 1.5 teaspoons vanilla
    * 1/4 teaspoon salt
    * 2 teaspoon cornstarch

    Place the berries on a piece of wax paper and dust them with the cornstarch. Once they are lightly covered, spread them on the bottom of a smallish baking dish or pie pan.

    Beat the eggs until they are light and foamy. Add the flour, sugar, milk, vanilla and salt and continue whisking until thoroughly mixed.

    Pour batter over the berries and bake in a 350 oven for 30-40 mins until the top is brown and the middle is set.

    Serve warm or chilled.

Directions

Bake at 350 degrees for 30-40 minutes until set. Will make 8 servings.
