Light Mustard Honey Chicken - Baked

Light Mustard Honey Chicken - Baked

Introduction

This dish is easy to prepare - mix all ingredients (and salt and/or pepper to taste) and marinate with chicken for 10 minutes up to 24 hours before (refrigerate if marinating more than 20 minutes). For Honey, note that 1 tbsp = 3 tsp (i.e. 2/3 tbsp = 2 tsp). Feel free to substitute seasonings to taste.

Recommend preparing this for a family or, for multiple meals to be used in salads, with pasta, veggies and more.

Ingredients

    1.3 lbs of skinless, boneless chicken breast (or adjust as available)
    2 tbsp Extra virgin olive oil
    2 tbsp mustard, recommend dijon or stone ground
    2 tbsp tarragon - dry
    2 tbsp honey (any kind)

Directions

Mix wet ingredients with chicken in dish or plastic bag.
Marinate chicken for up to 24 hours before
Preheat oven to 350 for 20 minutes.
Place chicken in glass dish or pan, using remaining marinade to put beneath chicken (for easy cleanup line with aluminum foil).
Bake chicken for approx 30 minutes*.
*To check for doneness, make sure a puncture produces clear juice from chicken. If chicken starts to look too brown before being done, cover in aluminum foil loosely until chicken is done.

Makes approx 7 servings.

  • I made it tonight, last night I prepared the marinade and then this morning before work I put it in the slow cooker and to make a super easy cleanup I used a liner for the slow cooker. The chicken was super moist and delicious. tomorrow I am having some left overs on a salad. - 7/1/13

  • 7 servings out of 1.3 lbs of chicken may seem small but, when made into a SpartPeople meal, with 1 starch and 2 vegetables it makes a great meal. You add a beverage or water and a lite dessert and it is very filling. I really like the taste and it was so simple. - 7/7/12

  • I would definitely recommend a slow cooker OR covering the chicken in tinfoil to keep it moist. This was delicious and really lends itself to great vegetable pairings, but I must have overcooked mine because it was dry. Great cold on salad the next day!! - 2/4/11
