Ingredients

    275 grams chicken liver
    4 pats butter or margarine
    1 oz dry sherry

Tips

For Passover, use margarine instead of butter, and of course, spread on matzo instead of baguette slices.


Directions

Melt butter/margarine in pan, fairly high heat, add cleaned liver in small pieces, stir a few minutes until no pink is left and then put into a food processor. Deglaze the pan with the sherry and add to the liver. Process until very smooth. Divide into three small ramekins and chill.
